This is an area where our advice is always: tread carefully. It's not strictly against the rules, but adding a pairing to a gen story would also tend to change a large part of what the story is about. It's not rewriting the same story if suddenly becomes a romance instead of something plot driven, you know?
It's also worth noting that while RemixRedux has never been a gift exchange, we do try not to do things we know would upset our remixees.
Quick question: am I required to "request" all the fandoms where I'm eligible, or am I allowed to leave out some of the older fandoms where I might be less interested in having a remix written?
You aren't required to list every fandom you qualify in, no. But keep in mind, those stories are still open season for your remixer unless they fall into the other ineligible categories.
If there are a lot of stories you don't want remixed, we recommend taking them offline for the duration of remix, just because the rules only let you have one safe story.
So even if we wouldn't meet the minimum fic requirement in a fandom, our remixer still might remix one of those stories if they choose? Like if they didn't like any of the stories in the fandom we matched on, they might look at some fic in a fandom that we couldn't sign-up for and still remix that story? Am I understanding this right?
That's correct. Only fic in a few categories cannot be remixed. (safe story, cowritten stories, wips, remixes you've previously written) Everything else is fair game.

If I use the category (on AO3) of Alliance-Union - C. J. Cherryh (books by SF author C.J. Cherryh), I have easily more than 7 stories of the required length. But if you break them up into their actual various series (Alliance-Union - C. J. Cherryh, Cyteen Series - C. J. Cherryh, Chanur Series - C. J. Cherryh), I don't. AO3 has grouped them, apparently on the basis that Cherryh herself says they're all happening in the same galactic setting, although light years and calendar years apart.
So does that fandom qualify for me? It may be moot: don't know if any other CJC fans are signing up. I do have one other qualifying fandom.
I'm not familiar with the books, but if the author says they're related, then you can probably count it as an umbrella fandom. I'd hope that anyone who requested to write in that fandom would also be familiar with the whole work, so you shouldn't get a situation where they've only read one series.

I do recommend putting your other qualifying fandom in as well though, and trying to pull others into play, just in case. :)
