Wow. I'm sorry he's such a knob -- and it is a good idea. Maybe another up and coming chef will want to take it over. Are there any culinary schools around Pittsburgh? You could maybe advertise there or online and interview the guys really carefully.

Also, maybe you can give a customer survey, see what they like or don't, and try to get the new person to tailor the brunch to their preferences. The customers might feel more special and less neglected that way, and that their frustrations are being addressed.
