I'm currently struggling with what kind of car to get when I return to the US. There is a set of parameters that are fixed: I am getting a convertible, probably 2-3 years old, stick, under $30k. I'm not much of a car person, but for what it's worth I know someone who was shopping for a convertible and was very disappointed with the test drive on the Solara.

I can't imagine that you'd be thrilled with driving a 2-door Camry. The MR2 on the other hand ...

Have you looked at the Mini convertibles ? The back seat won't be great for anybody bigger than Jamie, but they're as fun as the S2000. Never been in a Beetle convertible.

Actually, buying the S2000 would be the easy, default thing. I'm really trying to figure out if there are any other interesting 4-seater options I'm missing.

The VW Eos looks interesting (was perusing the Edmunds convertible buying guide). Hard-top, 4-seater convertible. I like the look (well, I like the S2000 and Miata look better, but I like the Eos look better than, say, the Beetle look).
