How does one gain 6lbs inside of a week, working out everyday and watching what they eat.... I don't get it... This up and down shit is getting to me... I'm sick of the heartache and tears everytime i step on that scale and realize that all the hard work isn't paying off

You have other measures as well.
Neck, arms, waist, hips, thighs.
Try a sewing tape measure and keep track. Sometimes it's something as simple as holding water, sometimes you've actually gained mass.
Don't let it discourage you! If you are watching what you eat, and exercizing daily, perhaps change up your routine a little. Sometimes your body gets used to things.
