Day 1 Chopped raisins lightly, put in strainer bag. Added about 2.5 gallons boiling water and 2.5 gallons tap water. I will let it sit for the remainder of the day, when the temp is cooler add yeast and yeast nutrient. Yeast is a Lalvin Bourgovin RC212, yeast has a 16% alcohol tolerance
