I have a rack over my back wheel which I used to carry by bookbag for many years -- I just used two bungees with hooks on the ends to crisscross over the bag, hook onto various parts of the rack, and hold the bag down. This worked great for books and jackets, but probably would squish anything too soft, like groceries, for which you probably would need some kind of pannier

I don't think I would ever have a bike without a rack on the back. Makes things easier and more comfortable. I don't like taking a backpack if I don't have to, too sweaty, hurts my shoulders, and it changes the weight and makes me feel unsteady.
I am not too worried about the weight being all on one side. In my old bike, I would put my small backpack in a basket pannier on one side, and I never felt off kilter. But then again, I didn't carry much more than lunch, water and clothes.
But a milk crate on the back would be nice and convenient. Just throw something in, don't worry about securing the package, etc.
