omg, I was watching martha stewart today while eating lunch, and she was brining a turkey so I called DYA in to watch it with me! I was explaining why it would be a good idea and how it could be done with the giant ziploc bags we already have in the house. I haven't specifically done a brine for turkey, but I often do it for pork and chicken.
i think i should try brining it. i'm so scared of cooking this turkey. i mean, i understand that my mantra is all about facing fears this year, but does it really extend to poultry? i probably should order a turkey too. isn't that what people do so they don't end up with the only turkey that's left over (otherwise know as the enormous turkey).
My family did a brined turkey a few years ago. It was delicious; it keeps the meat nice and moist. (hehe) Although, it does take some advance planning because you have to let it sit for a day or so.
Hope that helps! I hate the holidays so this is my one and ONLY contribution to promoting the holiday spirit.
dayp brined chicken at the turtle's film shoot and it was delicious! i thought it was kind of magical really. are there plastic bags big enough to brine a turkey? i'm all about ordering turkey in too. i'd chip in, however it just seems 'so easy'. i mean, really, how hard can it be? i'm making the in-bird stuffing. my mom sent me the recipe. i need to buy 'cheesecloth' so i can look for huge plastic bags.
haha! maybe. i'm laughing because martha also talked about how most people probably don't have enough room in their refrigerators to brine a turkey for two days. and i thought, "yeah, like me." so i was wondering how i was going to mangage that. i thought about putting it out on my porch, but a cooler is probably a better idea. i might actually be able to brine the turkey IN the cooler. brilliant! i just thought that just now.
broqued has two coolers that i'm sure could be donated to the brining endeavor then returned minus the salmonella. i will work on finding a brine recipe, as well as the instructions for cooking if you'd like. as far as ordering a turkey, i thought you just bought it at the super market? or we could order the turducken and try that craziness! just a thought.
i really can't answer your questions, SM. i am not as well versed in the art of meats as you are. i'm going to try and just buy one at the grocery store (poundage is another source of anxiety i'm uncertain about), brine it in my cooler downstairs, use martha stewart's brine recipe, cook that damn bird until the little plastic thing pops, and hope for the best. that's all any of us can really do, right? do our best and hope it all works out.
