Or, Something Else To Do With Parsnips.

I wanted something quick and tasty that would use up some root vegetables. Luckily, Munchkin Mail's recipe blog came to the rescue with a post about Parsnip and Lemon Couscous. I hope it works well for you!

I find couscous incredibly useful - tastes good and ready with no supervision in minutes. If you can get a wholewheat version, it's (unusually for pasta) almost exactly the same except with a slightly nuttier flavour.

I think it's wholewheat couscous I've got in the cupboard. We haven't had it for a while, which is why your recipe hit me as such a brilliant idea. That and the weather's turned colder, so the broth sounds like a nice warming thing to have!

I really hate being cold!

Actually, the couscous cools down a little while it's soaking up the stock, so if you want it really piping hot you could stick the whole thing in the microwave for 30 seconds or so when it's all assembled. Or warm your plates in the oven or a bowl of hot water first, or something.

Of course! I don't promise to be interesting, though: I seem to have spent at least two weeks wittering about root vegetables. Which reminds me that I meant to get around to posting about a couple of swede recipes - if the world can stand the excitement.
