if you ever have to make it veggie (or are in a hurry again) using miso as the dark stock base is really yummy too. its rich & salty & works pretty good. definitely better than a regular veggie broth base. :)
thats a great idea! im not a mushroom fan myself but i used them in place of meat in a stroganoff last thanxgiving for my veggie sister & she LOVED it.

Was in NYC last month to visit family. Stayed in Flushing and went to Peter Luger's. Miss NY a lot, still.
