Typing this up for my mum and sister and thought I might as well share.
Just as an aside, I don't like cooked carrots. At all. Give me a raw carrot and I'll happily chomp away, but cooked carrots, whether they be steamed, roasted or cooked in a stew? Yuck!
However I really liked this recipe. It's from Jamie Oliver's Ministry of Food.

I have an intense aversion to most cooked vegetables, mostly because my grandmother always boiled them until they were soggy. Something about the texture of soft mushy vegies really puts me off. Now I always steam them, or eat them in stir-fries, though I still can't handle peas in any form.
