Back in the 505

I got back from So. Cal. on Friday night, and spent the last couple days unpacking and restocking the fridge.  Today's chore was prepping a big pot of coq au vin for tomorrow.  As good as it smelled rendering the lardons and cooking up the chicken, onions and shrooms, I'm definitely looking forward to it.  Maybe I can convice carol_kitty and sabotlours to come over for ( Read more... )

Do a lot of walking and biking (yes, even when the weather's not perfect), which is probably why i'm lanky but in good shape. I mean, you are FUNemployed, right? :p

At least you got to go to the Domain. Perhaps one day when i get my own place i'll call it Tornado Central! :O)

The coq au vin should be fairly low carb. You do lightly flour the chicken before browning to thicken the eventual sauce, but other than that its chicken, onions, 'shrooms, and a bit of rendered lard from the lardons. I'm also going to bake up a spaghetti squash as an alternative to the egg noodles. That, a salad, and some steamed carrots.. a glass of wine if desired..
