always remember these 3 things

Sep 18, 2006 16:58

passion
disipline
intensity

these are the 3 things my dean said i need to be successful through culinary school.

1st day of orientation was pretty boring until the end where the dean spoke.

i'm in culinary school!!!! yay.

Congrats hot stuff! I know you're excited. Now make me a sandwich. A good one too, with the diagonal slice.

where is he? Is he enjoying it? or does he feel like he's loosing his creative edge, etc?

A chef i use to admire urged me not to go to culinary school because it was only going to turn me into a machine, and i would no longer be creative or a great chef. that it would suck out my passion etc.

which is probably a little true, but i dunno if i'll let it happen completely

he is at grace's trattoria on 3rd ave and 73rd st. (or 72nd, i always forget). i think he loves it - hes been working there for 4 years (did his externship there) and was made sous chef in the spring. its not perfect, as no job ever is i suppoose, but he really likes the people he works with and he gets to be totally in charge a couple days a week and has a lot of input on menus, etc. he loves being a chef and i dont think hes worried about "loosing his creative edge". if you work at any restaurant, you need to do things the way they do it for a good long time before you get to take off on your own. i think culinary school is excellent for a basic cooking education. you'll learns tons more when you get to the job market.

i added you back.
how was the saturday night event at the reunion? the kings were great, but they did last a long time, and by the time the music started up for dancing afterwards, mostly all the girls had left

it was okay. they didn't really count on having as many people as they did, so they didn't have as many tables near the food as there were at last year's (mine). it was at some spot in the kenan-flager business school, and it was really nice--they had another room that was accessible to us and that room had pool tables, a foosball table, and a flat screen TV (people were watching the OSU-UT game). we met some pretty cool people from c/o '01, so that was cool. for c/o '96, it was the usual suspects, which was cool. for c/o '95's, mostly cheerleaders and jocks showed up. boo on preppy people.
