Last night and continuing into this morning I made two lime margarita cheesecakes for my oldest friend's 40th birthday party today. She is allergic to wheat so I made a crust with nuts, cornflakes, sugar, butter and lime zest. It tasted great on the spoon and baked into a crunchy cookie like texture so I'm hopeful. I am a bit of a cheese fiend and am suffering from terrible withdrawal pangs... cheesecake is one of the few sweet tasting things I like, so you've helped de-rail a double whammy. 8)
Italian style cheesecakes made with Ricotta are on the lighter end of cheesecakes, as much as there isn't a truly light side to them. My mother used to make a lemony, citrusy one that was excellent, and not nearly as heavy as the traditional sort we see in North America. I bet you could use a non-fat ricotta and lighten it up even more. If you get the madness to try one, there should be some good recipes online if i can't find the recipe in my stash of cookbooks.
