I'm just contemplating making Severus and Hermione dolls to my own design. Do you know of any good web sites that give tips?

I looked and looked for websites when I was making these. There are lots of sites about dolls and plenty of people showing what they have made but I never found anything with any useful pointers.

I used a pattern for these as I had never tried doll making before and the book I used was Introduction to Making Cloth Dolls by Jan Horrox. You have to stuff the head incredibly hard otherwise the face gets wrinkles. That's about all the help I can give you I'm afraid.
