I'm sure that some of you think you hate eggplant, and that others among you would eat it with every meal like I would. Here's a recipe I would never have used if I didn't have six eggplant in my fridge, and which turned out to be excellent.

that sounds AMAZING. also, the strut step is clearly crucial. anything with red peppers AND artichoke hearts in it already has my love.

WW does not endorse strutting, but they should because it burns extra calories.

I love the way my house smells after I roast a batch. It's better than roasted garlic, tbh.

I have to be careful with them, though, because Kevin will eat them with a fork right out of the fridge, groaning with delight the whole time. I have personally watched him eat the last of three roasted red peppers out of a bowl, with the fridge door still open.

But, I mean, this is the guy who calls frozen enchiladas 'Mexicles' and will gnaw on them hunched over the sink, like a raccoon with a crawdad. I have to HIDE things I want to use later.

Yeah, I could pretty much eat my weight in eggplant, which is why I bought eight of them when I found them fresh. We had the first one tempura fried, which was super greasy 'cos I don't have a deep-frying thermometer, and the second as a light eggplant parm. As they get older and tougher and bitterer I'll salt them into slabs of chewy eggplant-meat and fry them up in piles. XD

Mmm. Eggplant. Totally making this right now for lunch tomorrow with the eggplant and carrots I picked up for a buck yesterday.

I seriously eat leftover roasted veg like it's candy. People need to get on roasting all their veggies ASAP.

I just made the eggplant oven fries again, this time with new & purple potatoes mixed in. There are leftovers.

Is there any veggie that isn't amazing roasted? I DO NOT THINK SO

Ugh, omg. I need to come visit for amazing foods.

But before I come! I am going to make mostarda and make pie out of it, with my Gruyere crust. And then I will bring it with me, idk. :D

You're pretty much the most amazing chef ever and I'm really jealous.

Also, have you tried avocado fries? Those things are fucking DELICIOUS.
