Anyone who is experienced or knowledgeable regarding Indian cuisine, please contact me. I am trying to figure out how to make something, and I am having great difficulty in finding an appropriate recipe.
I have a lot of experience eating Indian food, cooking some myself (but mostly watching various husbands of mine cook it), and writing reviews of Indian restaurants. So if it isn't too late I could try to help.
It is not too late to help. The item I'm trying to make is Vindaloo (chicken in particular). The problem is that "home" recipes seem to make some sort of light brown sauce that your meat simmers in, whereas what I want (and what restaurants serve) is a thick red sauce in which the cubes of meat sit, which is great for dipping naan into. I can't figure out how to make it.

A few books at Amazon have vindaloo recipes you can look at. One book, called A Chicken in Every Pot, says that the two essential ingredients are vinegar and chiles. Some books at Google Books, including one called Golden Cuisine of India, have vindaloo recipes.
But these are all probably just more of the wrong recipe. Sorry, I have no personal knowledge to contribute.
This is indeed the problem. I'm not supposed to confuse that with my average "restaurant" style Vindaloo. Except the problem is, I want the average "restaurant" style Vindaloo exactly.
Vindaloo at restaurants looks like spaghetti sauce, usually. Maybe that's just the "trick."
