I don't like brewing tea... but making refrigerator tea is super easy... and I'm keeping some going now (usually only a summer thing, but I'm also trying to cut back on the soda thing, and use far less sugar in my tea than is in fizzy stuff). Red Rose is the best I've found so far for it... just put however many teabags you feel you need in a pitcher (I usually use 9 bags in a 2-quart... but I also like it weaker than most people, so end up watering it down from there).... hanging near the top if possible (works with a teaball as well, but not quite as good, if you get the metal taste into the water)... fill it with water, preferably filtered (picks up the tea faster/better and knocks out some more of the bitter flavor for some reason), then shove it in the fridge overnight (ok, really less time than that, but

Ah, see... I just use one of the two Pyrex pitchers we have... and stick them in the dishwasher with the rest of the dishes when empty (unless I get inspired to just give it a soapy swipe with the bottle "brush" I bought to use to wash it and my travel drink containers). The advantage of using the tea bags - I just toss those out.

you could hit up the vegetarian section of allrecipes and see what that has to offer...i've seen grilled veggies (squash, etc) with various citrus-based sauces, and those can be quite tasty.
the real question is your cooking ability and what appliances are available to you.
also, don't forget about sweet potatoes! they're healthy (lotsa protein!) and can be used in much the same way you'd use regular potatoes.
Until you actually get to the point where you have serious discipline about it, walking is way too easy to put off: I'm too tired, it's too dark, it's raining, it's too cold, it's too hot, etc. That was why I started doing push ups instead: it takes less than 10 minutes out of the day, and the only valid excuses for not doing them are sickness and injuries. No, it isn't as aerobic as walking, but it *is* exercise, and it will help you burn calories while getting your energy levels up.
This is actually why I started walking inside my office building. I take a quick ten minute break, go for a walk, come back. It can't be too hot/cold/wet, and I can do it just before or after lunch if I want to.
I'm trying to do the mall walking thing again... occasionally during the week at Columbia... and I'm *trying* to join webqatch and others at Arundel Mills on Sunday mornings. (trying because right after I said I was *going* to, I did the ankle sprain thing... and while it did get better, it's now still having issues, and I may have to go get it checked out if it doesn't stop soon.. being better about wearing the brace thingy to help it out, too)
Yeah, Jim and I were trying to do the walking when we got up, but there are too many reasons not to get up early. I'm doing better trying to do it just before I cook dinner, or while I'm cooking dinner if I'm like baking chicken or something.
