Copy and pasted from Smitten Kitchen's Ratatouille's Ratatouille, posting just so I have a record of what worked and what didn't. I should've taken pictures of the vegetables before slicing and of how much I had left over...
Lovely, though I strongly dislike eggplant, and zucchini and squash are rather low on my list of preferred vegetables. However, take out the eggplant and add some, say, chorizo or andouille, and I'd love it. ;D
I've tried eggplant in a dozen different preparations, and I still can't stand it. It's not just taste--my tongue gets tingly (in a bad way) when I try it. :]
