The Versatility of Risotto

ammitnox asked about a basic risotto recipe, and when I sat down to write, it seems as if I have a lot to say about risotto. And, as she is ever wise, she suggested that I post it somewhere on the Internets so I can refer to it later. So, here it is, with a few additional points of commentary. That was a fantastic post.

The thing I love to add that makes risotto so decadent is white truffle oil, or black truffle oil. That with cheese, and some (insert the mushrooms you like) and it is heaven.

but be sure to use a very little bit. Like sesame oil, with truffle oil, a little goes a long way.

Thank you! And you are so right. I completely forgot about the oils. Also, I learned from stu_n that you should add a few drops at the very end. I'm thinking, now, about the pumpkin oil that hvw gifted us.

I wholeheartedly agree. My favorite risotto is mushroom risotto with white truffle oil drizzled over the top [swoon]. My friend Lou makes THE best but I don't have the recipe. I'll try to get it some day and share.
