hmm i have some experience with this

1)your mother: i actually told her "i love you; don't leave me because i only have one mommy" if i could have added more i would say "i understand you," cause i think that would mean a lot to her.

2)your best friend: to one of them: "you were always there for me. thanks." to the other one "go down the right path and live a good life. do it for me. i love you." to my ex, who i don't remember what i said to, i would say "i love you. i love you."

3) a child: i told this little boy i saw on my way into the ICU "don't worry, you'll get better." i'm glad i said that, though i barely remember it, and i do hope he is okay now cause i'll never see him again. to any child i'd probably say "live you're life the best way you can"

4) a complete stranger: i guess hello and goodbye. maybe just "everything happens for a reason"

5) me: "you're a good soul. you care. i've always appreciated that."
