Soooo.... I have discovered that, even though the new job pays 11.00 per hour, it has such a poopy insurance package that I will actually be paying MORE in the long run by working there

Sounds like this Brett guy is pretty on the level. Of course, he is going to be motivated to keep you on staff if you are a good employee (of this I have no doubt), so some of what he is telling you will be colored by that, but that is pretty sound advice nonetheless. Good luck on whatever you decide to do- I myself have a decision to make where a job is concerned, story forthcoming!
April, what you need to consider is what is going to make you the Happiest. I think that at this point, if you decide to stay with Starbucks you need to demand better hours, a more regular schedule, and better pay. You have been there for how long, and how much are you worth to that company? I do agree that with all the problems that Starbucks presents, you need to remember your your HAPPINESS. Remember that Brett is a d-bag and that he needs people to put up with his crap. Demand that you are a shift lead, demand that you get better pay, demand that you get better hours. Tell him that you have this other job that you could take for awhile and then move on. You want NEED the money, but you DON'T need this job. Remind him that you can go on and get better jobs if he doesn't start treating you better.
The choice is yours, and you will do great at whatever you decide to do.
