Everyone here has gone veg and so I am wondering what to serve for Thanksgiving this year. To be precise 2 out of 3 people have gone veg. The third seems willing to go along with the idea ( Read more... )

People who typically cook and prepare meat always think it is so complicated to cook for vegetarians. It's simpler :-)

You don't need a substitute for the turkey. Just add another veggie dish. You could do a simple squash pasta, or something. That would go well with the rest of the traditional thanksgiving foods. Stuffed squash sounds good too :-)

Having been a vegetarian most of my life i agree with Catachrestic. Don't try and substitute just add another veg dish and make the size of the meat portion smaller.

There is nothing worse than veg/mock-meat masquerading as something its not.

If you have space in your oven most bakes/tarts are great as they can be made in advance.

I can't imagine anything more horrible than tofu turkey. It seems like the worst of two worlds!

I am kind of leaning toward the tarts idea.

Adding another veggie dish would be easy but it doesn't really solve my problem. What I wnt to do is have a kind of show stopper piece.

I don't actually typically eat meat but this is the first time everyone else seems willing to go along with being veg.

in its base components, turkey provides a protein dish. Not sure what kind of vegs you got going on there. Some vegs will eat cheese, eggs, and dairy, some will not. Those are all protein sources. Otherwise, assuming vegan, I think veggie folks in general are just happy with a variety of veggies and do not often look for meat replacement like tofu turkey.

I would just make sure there is a good protein choice (ex: rice and beans related). i am behind on the protein info of veggies, I know some have it and some dont. I think there used to be this idea that rice and beans created a perfect protein, example Legumes + seeds or + nuts or + grains, but I am not sure if this is still true. A quick search on vegetarian proteins came up with a few ideas that you could play with.

I do like cooking and it has been kind of a fun puzzle.

The mini quiche would have cheese, eggs and cream. The stuffed squash recipe contains nuts. I'm not too worried about getting enough protein since we are all ok with dairy products.

What I would really like to do is find a good source of dairy products in Austin that I knew was cruelty free. Do you happen to know of such a place? I guess the farmer's market?

Not sure about cruelty free though the farmers market sounds like a good place to start. We have been doing some local veggie coop thing called Farmhouse Delivery and there is also Greenling. I mention these bc they might be able to tap into local cruelty free stuff too. Good luck and lemme know if you come up with anything!
