Today's pick up is the second to last week of the Winter share of my CSA. Talk about abundance. They don't mess around and this set will probably last us all the way through a Memorial Day trip to javabird & goldings695's place this weekend. Check out what we got ( Read more... )

I've been doing chard in a fritatta with goat cheese, almonds and dried cranberries. It is amazing.

Also, celery and carrots can be used to make lentil burgers, along with onions and mushrooms and parsley - add the tomato and you can make lentil shepard's pie with the potatoes.

Oooh, we have almost all the ingredients for that fritatta except for dried cranberries. I'm going to Trader Joe's tomorrow evening, so I could just pick some more up. Thank you so much for the suggestions of the lentil shepherd's pie & lentil burgers. We've been trying to expand our horizons more with beans besides salads & soups.

lentil shepard's pie is amazing and versatile; you can put any veggies you want in the lentil mix and then just cover with mashed potatoes. The Moosewood Cookbook has the recipe I use for lentil burgers - if I recall, it was garlic, onions, celery, carrot and mushrooms sautéed in butter with a bit of marjoram and combined with mashed cooked lentils, walnuts and parmesan cheese - then form into patties and cook them in a good amount of oil (important because they stick).

also, if you have any garlic mustard growing wild near your house, you can add it to the pesto to balance it out. They're really invasive weeds, but the leaves are completely edible.

I don't have any garlic mustard around here but looking at pictures makes me want to ask about it at the nursery on Friday when I get more planters. I'm trying to plant more edible greens this season.

you don't want to plant garlic mustard - you want to find it. Look in any woodsy areas, bikepaths, etc. that aren't too close to actual car exhaust. They're really invasive weeds, so planting them is a bad idea. Taking them out of commission where they can't invade anyone else's garden works just fine.

couscous or quinoa salad - chickpeas, the tomato, the red onion, olives, broccoli and some basil chiffonade. Dressing would just be garlic, lemon and olive oil.

Strawberries - seriously, that amount I'd just eat straight up. But then I *lurvve* strawberries.

Sounds so good. And I just found some wheatberries in my stash that should be cooked soon. Those should go well with the quinoa. I also have 3 huge organic lemons that need using as well. These lemons produce the most and best juice I've ever had, although I haven't had Meyer lemons (yet).

Meyer lemons are a bit sweeter (and usually smaller) than regular lemons; I find they're great for drinks and for marinades and sorbet, but you don't really need them for vinaigrettes and such.

Oh and those strawberries are *amazing*. So juicy and sweet even though they're big. Usually big ones are full of water, not so. Oddly enough, I bought 1 lb. of strawberries at Whole Foods right before collecting the CSA, so now we have 2 lbs of strawberries. Yay!
