Peel off the tough green skin, cut the flesh into sticks, snack on 'em. I hear they're good with dipping sauces if that floats your boat.

Peel, chop into ~cm cubes, toss with olive oil, roast (say, half an hour, medium oven).

gratinee them if it's a cold autumn day, core them out and stuff them with barley and veggies (meat optional), or ovenbake fries with them
