Valentine's macarons

Honeybee jokingly asked me whether there would be heart shaped macarons for Valentine's day. I told her that it would be too difficult to make them in a heart shape. Little did I know! These are from Brunetti's and are remarkably good :D

I chose chocolate, passionfruit and "those heart shaped ones".

Yes, I have no idea how they made the tails and top dimple sit so nicely either.

Did it have a firmer texture, or anything like that? The edges are so delicate, that it's not like you could use a set of cookie cutters in the over to control their shape, so I can only think that they were piped on... but to then get them so even?

The texture was the same as the others - and they were all delicate. The girl in at Brunetti's went to put on gloves and put them in the box by hand rather than using tongs because they would break. It made me think of handling fine jewels, or rare books :D

I agree with you, I think they were piped. And I think they have some highly skilled people working for them! This is something that I just had not appreciated before.
