Bought all the ingredients for this, then Chris got sick and now I'm sick. The mushrooms will likely go bad before we can use them

that sounds good! really good. I think that might be good on a base of kale, with pumpkin cheesecake for dessert. And maybe something tomatoe-y on the side. Maybe you can freeze the mushrooms?
