Cutting and pasting between MS Office products is often a hassle. It creates all kinds of hidden links and "features". Standard cut-and-pasting an Excel plot will actually paste the entire Excel workbook into your Word file. This gives other access to your data, bloats your Word file and can create all kinds of formatting headaches.
I recommend pasting the plot as an picture, which is a lot easier to manage in Word and won't expose your Excel data. Here's how to do it:
Go to your Excel plot.
Hold down the Shift key and select "Edit"->"Copy Picture..."->"As shown when printed"
Now open up your Word document. Select "Edit"->"Paste"
This will paste only the *image* of the chart, rather than whole Excel workbook.
Right-clicking on the image in Word will give you formatting menu options.
