It's just a generic term for any genuine cheddar cheese, as opposed to the process cheese spread.

Yeah, I was referring to the processed cheese that goes by the brand name Real. You can see it on Papa John's boxes, "Made with Real (TM) Cheese!"

Where are the numbers for flavour, texture, and consistency? ;)

If we're going to be eating cheese at all, I don't think a few points of fat or carbs would really be a determining factor... These days I avoid both varieties all together. *sigh*

I wouldn't call 235 calories a "few points." ;) If you think about it... 65% of Velveeta is fat. 74% of cheddar cheese is fat. If you think about it, that's really disgusting. You're pretty much eating fat. And salt. And oil.

I've gone 8 days no dairy. It's good for you to avoid all the dairy. :D
