How to make Manchet bread (I'm writing it down before I forget):
1. Take a peck of bolted (white) flour.
2. Rub in some butter.
3  Set (a third of a block) of alebalm (yeast) by the fire to grow.
4. Mix in the alebalm with a little buttermilk.
5. Knead.
6. Set by the fire to prove (rise).
7. Fashion into small rolls.
8. Cook in the oven, turning regularly.

Perfectly well!! We have then for dinner in the gentry during Kentwell!

Though the first batch (the weekend before last) were rather hard on the outside but wonderfully soft and fluffy on the inside.

And you can add spices and raisins/currants/sultanas if one wants to. Sometimes garlic is added but I can't eat that!

I need to make them up now!
