Huh, I had never heard of Rotel before. Wonder if it's a regional thing? Based on what came up on google, it looks like it's just diced chiles and tomatoes? In that case, the pepper jack might actually might be better, to go with the chiles. =)

Yeah, that's what it is. I usually get the store brand at Aldi, but Target had them all marked down, so I stocked up there, earning me some funny looks from fellow shoppers.

I am an insanely picky eater, so I very rarely find a recipe I like, but wow this looks amazing! I must try it.
