cheddar is naturally white and is dyed yellow for fun. white cheddar is pretty popular on the east coast while yellow is what most people in the midwest prefer.

Good to know! However, my problem isn't that the cheddar here is white, as I do in fact love white cheddar. It's that I miss that kind of disgusting yellow dyed color as well--but most of all, I miss the way proper cheddar melts.

Well, its kind of strange about the cheddar because I found some in...can't remember which shop but one of the posher chains, and it was much better than English supermarket cheddar I thought! I don't remember if it was white or not. I find that most of the 'cheddar' in Tescos, etc, is rubbery and doesn't taste of much.
BTW Can you get over to a bigger town sometime with a Meny in? It has loads of foreign and 'foodie' type food in. I bet they'd have the water crackers...
maybe someday I will get over to a bigger town...cheddar is unfortunately not worth the price of public transportation to me, not just yet anyway. but my friend did bring some from sweden, which we shall soon enjoy with some good chilean wine!
