You can leave it on low all day (or overnight - it's good breakfast with toasted biscuits). And if you want to vary the flavor a little bit, brown the onions, garlic, and jalapeno first or sub in cilantro for the oregano.

Man, I think I might. Elise is always making things in the crockpot, and it makes the whole kitchen smell good for days.
