favorite chili recipes?

I haven't tried any chili yet in my newer model crockpot. Wondering for the best recipes for the newer models..m

this is my favorite (from the Fresh from the Vegetarian Slow Cooker cookbook). I sometimes throw in some dulse or seaweed to freak out my husband. I've also used other beans if I didn't have kidney beans handy. I've used three different crocks and it comes out just right, you may have to adjust if you have a different size ( ... )

my crock pot is about a year and a half old. Does that qualify as new?

Yeah I just wanted to be sure if it was one of the older models that cooked at a lower temperature or one of the newer ones that cooks hotter cuz the time seemed a little long so I wasn't sure.

I don't really have a recipe, instead I just toss it all in the pot (until it's near full,) and season according to my taste.

First I saute celery, onions and garlic in oil. I put all this into the pot with everything else - usually tomatoes, tomato paste, various beans, beef and chili powder.

My favorite less usual ingredients to include are chipotles in adobo sauce (found in a can, the BEST if you like spicy chili), corn, and a little cocoa powder, cinnamon and celery salt

Any general rule of thumb for time and preventing it from being watery?

Aside from the crushed tomatoes in a can and tomato paste, I don't add any extra liquid, at least initially. Usually, all my ingredients are slightly deeper than the amount of liquid. The fresh onions and celery definitely add wateriness as they cook.

After about two hours on high, I add a bit of water if needed. Another hour or two after that I adjust the spices and eat.

California Black Bean Chili

1 1/4 lbs gound turkey
salt & pepper to taste
2 cans (15oz each) black beans, drained but not rinsed
1 can (7oz) diced green chiles
1 can (14oz) diced fire-roasted tomatoes
1 can (8oz) tomato sauce
3 cups diced zucchini
1 cup chopped onions
1 packet chili seasoning mix (McCormick, I use hot)
1 tablespoon chili powder
1 teaspoon crushed garlic
Diced avocado or guacamole for garnish

1. In a large skillet, brown ground turkey, stirring frequently. Season with salt and pepper. Drain and transfer into 4-quart crock pot.

2. Add remaining ingredients, except avocado, to slow cooker. Stir thoroughly.

3. Cover and cook on high setting for 4-6 hrs.

Not much help here because my family tends to make more chili than a crockpot, even our big one, will hold, but wanted to comment and say this. If you're fond of spices in your chili, I would suggest a bottle of DWalker's Dragonfyre spice. That stuff IS AWESOME in crockpot food, since the food slowcooks and the heat from the spices comes out in cooking.

This is my fave, and I've made lots of chili's. It's from Nigella Lawson.

4 tablespoons olive oil
4 onions, finely chopped
2 cloves garlic, minced
2 teaspoons dried or crushed chili flakes
2 teaspoons ground coriander
2 teaspoons ground cumin
5 cardamom pods, bruised (green)
2 red peppers, seeded and finely diced
3 pounds 4 ounces ground beef
7 cups canned chopped tomatoes
1/2 cup tomato ketchup
1/2 cup tomato puree
1 cup water
2 tablespoons cocoa
3 1/2 cups canned red kidney beans (I use black beans...I hate red kidney beans)

Saute the onions and garlic till soft, add the seasonings and fry for 1-2 min. add the meat and cook till no longer pink. I then throw it in teh crock pot, add the tomatoes, ketchup, puree (paste) water, cocoa and beans. Low for about 8 - 10 hours. (that's how long I'm at work for)
