You can get homebrew ginger beer kits, that you can use standard "kit" homebrew equipment for. (Both alcoholic/non-alcoholic).
(You can get the fermenter + plastic bottles + other bits and peieces for ~$100 from a homebrew shop)
A few places also do cider homebrew kits as well!
(Extract/kit brewing is easy, you just need a) good sanitisation! b) good temperature control, at least consistant over ~5-7 days)
