so ive started working on a "broom" closet. Mostly so i can take the current broom closet in the kitchen and turn it into a pantry, but it will also be nice to have a place to put the vaccum

I am not sure of the answer for insulating your chimney. I would think you would want to use something like "Safe and Sound", which is designed to be fire proof. We are planning to remove the chimney from our new house and I came across this website in my travels. If it doesn't already have an answer, you can type in your question and get one.
