These days we mostly eat salad, cheese and crackers, and guacamole -- which are all vegetarian, I guess! -- but in theory we can help.
Once I get home I will try and remember to send you the recipe for stuffed acorn squash (it's basically halved baked acorn squash with drunken apples/pears/cranberries filling).
I like to marinate some firm tofu in mixture of vinegar, tamari, sriracha, a little honey, and grated ginger for a few hours and then saute it up. Sometimes I throw some carrots or other veggies (asparagus would be yummy, or peas) and a little fried egg and add a little more tamari and stuff to taste. You can eat it over rice, noodles, or greens.
