I know a friend of mine found restaurants in Spain very helpful she manage to get a card that explains in Spanish that she's coeliac and while she was staying at a resort full board (wasn't a very fancy place or anything) they sent out a chef to her everyday to see what she wanted and he prepped her food start to finish to ensure no cross contamination. Methinks the card must have been this http://www.coeliac.ie/gf_living/travelling - she also said the range and price of coeliac food in Spain was awesome and brought home loads of stuff - maybe a choice for a holiday at some point
At least on the west coast of the United States, most grocery stores have entire aisles devoted to gluten free products. I wish you had that in Ireland!
I was at communion in Ely Cathedral last autumn. They said on the hymnsheet that they offer gluten-free communion bread. Which I thought was cool. Would be nice if everyone was that aware.
