ACTUALLY, when you say "dye" and "die" that's where the big difference is. when you saying "i'm dying" it's more proper to say than "dieing" because spelling laws say there shouldn't be a vowel before a vowel in a word involving "ing." thus since it couldn't become, "dieing" or "diing," they made it "dying." although the word "dieing does exist, it's more common/proper to say "dying."
