I used to be a nanny for this family and they have a cloth diaper home business. Their diapers are awesome! Totally easy to use and wash and everything. You should check it out: http://www.diapersafari.com/
We have been trying to use little Pyrex containers in place of plastic bags as much as possible. They generally do pretty well, but get slightly annoying if you have have more than one or two things to bring with you. Also, not sure they are great for liquids, but J uses a Pyrex for his lunch, and just puts it in a big, gallon bag, in case of spills (then reuses that bag every day).
You will have to share your tale with us if you switch to cloth diapers. We tried for a couple months after Sophie was born, and they just didn't do it for us. Even doubling up, there were leaks all over, to the point that we were doing laundry 3-4 times/day, at least. We try to help the environment in other ways, with our vegan diets, trying for in-season, local produce as much as possible, J's bussing/cycling to the office. That helps us feel less guilty about the diapers. There are biodegradable diapers though - but it doesn't really do much for the environment when biodegradable stuff is buried in landfills and can't degrade.
The cloth diaper families I have worked for always ended up having stinky houses :( The urine smell was just so strong when the diapers are sitting around waiting to be washed.
I am just not sure if there is an eco-friendly alternative that is as effective as the earth-killing diapers. They have managed to make the cloth diapers convenient, but to prevent leaks you have to be super-anal about changing every 3-4 hours. One mother I worked for wouldn't even let me check the diaper b/c she didn't want them stretched out. She just had me change her boy every 4 hours no matter what. So I'm not sure doing that much laundry is any better for the earth....
