Something is wrong with my brain. It started with my hormones and what is lovingly termed PMS, a condition that is new to me. Then I don't know, stress? .......snowball effect

Hey sweetie, if you really do have PMS its likely that you've got an extra two pounds or so water rentention. So, you've actually lost a pound. Congratulations!
Sometimes when somebody changes their diet drastically, their body goes OMG WTF and decided to hold on to all the body fat and "good stuff" (our idea of bad stuff) incase we are starving. Its a survival instinct. So if you are choosing to eat much less or very differently in the beginning you will at first gain weight until your body realizes that you aren't dying. The same if you start working out, your body will first build muscles and then lose weight.
So don't freak out too much and get discouraged if you gain weight, its normal. It means everything your doing is working!
I second everything both nevagirl and jessamiah said. On top of everything else, make sure to take a daily multivitamin if you're not already. :)
I've got like, 4 years worth of old MSL mags, which have been living at my parents' house for 6 months, since my mom borrowed them. There are a lot of cake recipes in the whole collection (even though now I've got to order several back issues while I'm waiting for my subscription to go through.. grrr...), so you're welcome to borrow them as soon as I can wrestle them back from my mom!
Oh, and I saw you mention Jill Duggan in the Vancouver community. She's the daughter of a close friend of the family. I was on the committee to name her business! Also, the Notte family (of Bon Ton fame) were neighbours of my mom's side of the family in West Van a long time ago, but my grandmother visits their cake shop to catch up with them every so often. :)
