I was talking to a friend about how toasty it was in the bakery the last few days. "But why don't you have AC?" Umm... because with an oven and a toaster and such going it's kinda an exercise in futility. "But, it's hot... and it's AC!" Seriously, can you imagine the energy bill of heating and cooling systems fighting with each other? "Well, you just need real [I presume central] AC!" Sure, yeah, whatever, that'd be nice... next subject...
Similar situation but with even worse consequences for you. Cold air gets into a bread oven, and whoops! dull, tasteless, half-risen loaves. Temperature control (hell, control period) in the bake shop is everything, or so was beaten into me in my baking and pastry labs.
