Hello and Goodnight

It came to my attention recently that people will use Good Morning, Good Afternoon and Good Evening as a greeting and they seamlessly replace the need to say hello when starting a conversation but for reason people only say good night when they are departing.  If you meet someone when you're out at 10pm you would never say good night to them like

I really don't get what the big deal is with tea or coffee. It's ok but people seem to go mental over the stuff and the there's the whole caffine addiction to.
