Goat milk crepes, etc
So - goat milk crepes are whiter and seem to cook more quickly. Substituted both goat butter and goat milk in the standard recipe.
Very yummy in any case. No real flavour difference that I noticed, though perhaps a little more buttery ( but that might be using goat milk (whole) vs my standard 1% cow milk.

Upcoming wknd cheese plate
So - some guests coming this wknd and one of them has milk issues, but does ok with sheep and goat milk

Big batch
So - first cheeses that I've vacuum sealed rather than waxed in the cave. Little concerned that they seemed wetter than normal, but feeling like that might be because I cut a 4 lb cheddar in half to make it easier to seal and realized it hadn't 100% set...
That said, the curd of this batch had the best flavour yet, which I put down to animal rennet.

Cheese batches
Ok - so yesterday I finally had a free ish day to lay down several batches. Did a 3 gallon cheddar (my largest to date) as well as chevre and whey ricotta.
Pretty much my standards, but using liquid animal rennet and larger batches.
3 gallons is about a 1/2 gallon to much curd for my press. I need to upgrade to the next size. Overall, absolutely no ( Read more... ) -
Holiday cheese stuff
My wife loves me! For Christmas she gave me mold!! And Ash!!
And some papers and a cheese mat.
For my birthday (today) she gave me something that really sucks
A vacuum sealer!!!!

Bad cheesegeek
Been a few weeks. Of course I've had cheese in that time, so I should have written about it. It was time I seem to have been without.
Cool thing was trying our own cheddar again a month later. Definitely aging well. looking forward to sharing at Yule.
