For supper tonight, I prepared vegan comfort food: potatoes and spinach, stuffed in a pita.
Ingredients:
1 large potato, skin on, halved and then sliced into 1/4 inch slices
1/2 bag or 1 bunch of spinach, chopped
1.5-2 tsps freshly, coarsely ground cumin
1/2 tsp turmeric
1/4 tsp ground red pepper (if you can handle heat, you might like more)
