Those potatoes look great! I may have to try it with either no cheese or Max's allergy-free cheese. :)

i think that the butter and herbs would be enough (or olive oil and herbs) but if you are skipping the cheese you might want to use a stronger flavored herb... maybe basil and garlic or something. or just garlic infused olive oil.
