Wash and dry as many potatoes as your family will need. If they are large, cut in half (so you have two ends, not lengthwise - the bottom of the potato will get a gorgeous crust as it cooks this way

i think that the butter and herbs would be enough (or olive oil and herbs) but if you are skipping the cheese you might want to use a stronger flavored herb... maybe basil and garlic or something. or just garlic infused olive oil.
