OMGosh!! This looks amazing. I'm not a shellfish fan, but I have a bunch of tilapia, and it think some cod, around here I need to get used up. I'd also like to try to bake them, but, WOW. Yummy-ness :) I have to admit I've never heard of keffir lime leaves. I'll have to research where to get some. Thanks for sharing!

I also thought about doing a low-oven bake and then searing them on a hot pan for color. I think I'd miss the color ;-)

Yep, I noticed that the saltiness was less noticeable in the leftovers today too, but I'll still leave out the salt next time...and possibly reduce the fish sauce too.

Sounds delicious. Hubby won't buy Tilapia since they are bottom feeders. We do more cod. I never cared for scallops but he made me some that were dynamite. I'm a fan.

Hmm, I hadn't heard that, so I did what any sane person would do and googled it. Turns out that yes, they occasionally will bottom-feed under certain circumstances, but generally they're vegetarian and/or opportunistic eaters, that eat low on the food chain and therefore have low concentration of a lot of toxins.

But then, I don't really object to eating bottom-feeders, I eat flounder and crabs and shelfish too ;-)

I adore scallops if cooked well. Just delicious.

(also, FYI, cod are bottom feeders too, moreso than tilapia)
