Pulled Pork and Mango Salsa

 I'm getting together with some girlfriends tonight.  We are having potluck.  One woman is bringing paella, another is making a flan, a third is making caramel ice cream and I'm bringing pulled pork and mango salsa.

I just made steak on the grill, so pork doesn't sound so good right now...hahahaha. But the mango salsa? I miss the mango trees in the Philippines...I love that fruit, especially in Mexican food, salads, salsas, and dips.

We get mangoes here now. Love it and buy as many and as often as I can. As a child we had the trees and that was a lot of fun, climbing, stoning (hitting) the mangoes off of the tree so we could eat them when they were ripe! I love the mango salsa recipe too and will try it! Pull pork I enjoy too but never made it myself. I usually bake pieces or a shoulder!

If pork is done right, I actually like it better than steak. Sadly, last night I would rather have had your steak! I got the wrong cut after all. It was okay, but I wouldn't have used that recipe with that cut in retrospect.

I'm slow to get into the mango. I love it in salsa, and then I like it with sticky rice, but mango alone... not so much. I can't stand mango flavored jelly beans.

Pork done right is very tasty. Too bad the pork wasn't as good as possible but at least you had good company.

I love salsas but never had mango salsa. I would love to try to make some because Rose likes mangoes.

I think I would pass on the mango jelly beans also. :)
