I wonder if you could do this with turkey? We have a turkey that we had for a mock thanksgiving dinner about 4 days ago. It's in the fridge still, meat still attached and everything. I have knives that are more than sufficient to break down the carcass enough to put it in a dutch oven and boil the bejesus out of it...

That's dinner tomorrow, folks! I will let you know how it turns out. :)

with turkey you'll need to add a bit of olive oil and more onion and celery as it is drier and less flavorful, but otherwise it will work just fine :)

I'm trying to remember what my roommate did to it that night. I know she doused it in butter and spices, it came out amazing. When we scooped out the aluminum pan it was in (our equivalent of the drippings) we had plenty. Here's to hoping!

just keep tasting the stock and reduce it over and over again until it has TONS of flavor.

We make homemade stock all the time! I will never go back to canned soup again.

You can also add carrots, turnips, celeriac, tomatoes--almost any veg you have left over will help the stock except green peppers. Bay, garlic, and any other herbs you might normally use for poultry help too.
