Pollo de Campesino

There was an awesome Mexican restaurant not far from us called "El Campesino" (the farm laborer) and their signature dish was chicken in some kind of cheesy sauce. I LOOOOOOOOVED that stuff! but I have to say I'm getting kind of tired of the CONSTANT push for donations on Facebook. Every time I turn around its a new crowd-source plea. And most of them, while perfectly decent and acceptable, aren't even close to being dire.
