I baked all day today, and it was absolutely lovely. I also made two trips to Publix after I discovered (after leaving the store) that the icing I'd bought (I know, I know...Store-bought icing?!) was prepared on the same surface as tree nuts--Josh is allergic to tree nuts. I think I just added the sugar too quickly, or maybe had my mixer at too high a speed. I got the soft peaks, but now I can't get the lovely firm peaks that are needed before you can put them onto a cookie sheet.
